Egg Tart recipe
Ingredients:
Pastry:
125 gm.Butter - chilled
60 gm. icing sugar
1/2 egg white
1 egg yolk
200 gm. plain flour
1/2 tsp. vanilla essence
A pinch of salt

Egg Custard:
280 gm. fresh milk
125 gm. sugar
3 eggs
1 tsp. rum
1/2 tsp. vanilla essence

Method:
(1) For pastry: beat butter and icing sugar till wellmixed.
(2) Add in white and yolk and mix.
(3) Add in vanilla essence and then the flour and mix into a dough. Rest for 10 mins. Press dough into small tart moulds.
(4) Bake the tart shell till half-cooked.(about 10 mins)
(5) For egg custard, heat sugar and milk together. Once sugar dissolves, off heat.
(6) Whisk eggs and pour into the milk mixture. Do not whisk till frothy.
(7) Add in rum and vanilla essence.
(8) Sift the egg custard and pour into tart moulds and bake at 175C till egg custard sets.

this recipe is really good,
especially when u don't need to flip the tarts at all.
the custard is soft and juicy while held by a layer of flaky thin crust. Its a definite must have for any sweet tooth. the cats came ravaging for it when i accidentally dropped a piece of the tart on the floor. This is totally inspirational!

oh btw,

Chef Tan pls take note your crust muz b evenly spread next time. Thick uneven crust really very sweet, Can cause diabetes. Anyways, gd job!

oh yes im sure. don't worry. im sure it'd get better. at least the cats dun shun it at first sight. n the crust is not flaky at all fyi. i dont really like flaky types anw. yarh.perhaps u can start by erh learning to make smth that is simpler instead of smth that requires flipping since u're nt really good at that yet. but im sure u'd get better too hopefully.
